I'm up from a cardiac surprise to cook ribs for tomorrow! Poetic, isn't it? Anyway, they couldn't decide what my heart is up to, but whatever it
is, it isn't critical. So they cut me loose and on the way home I got three huge racks of St. Louis Cut pork ribs and they are all rubbed down (Rendezvous
style), and trimmed in the fridge waiting for the grill. I finally bought one of those chimney thingies for starting the charcoal, and I have three sacks of
hickory, applewood, and persimmon chips to smoke 'em with. Hoohah!
Who else is playing?

I just did the first check on the meat. It is so beautiful, I decided to take a picture and show off. Those little strips are thin slices of pork loin that I
trimmed off to make the ribs cook evenly. I'm going to eat them right now, chef's privilege!

I knew you'd recognize it! I modified the grill to spread the heat evenly all over the hot box, and I extended the chimney way down into the hot box to
keep from exhausting all the heat. A certain secret sauce is slathered all over them now, and in about 20 minutes, it's eatin' time! It is already
beer-thirty, after all.

Aw man, you guys are killing me slowly. As I lay here recovering I continue to see pics of Waay's and Harry's cookouts and food. God, it makes me wanna
just lick the screen on my laptop. Make sure you eat one of those strips for me waay, they sure look tasty. You guys have a great 4th and eat lots of that fine
food.

Hey, I've been looking at making sausage this summer. I have one of those snout things to go on my big mixer for filling animal casings, and I already have all the other stuff. All I've ever made is country sausage, so the link thing is gonna be fun to learn. My corn isn't in yet. All we're picking right now are strawberries, blueberries, pole beans, peppers, eggplants and squash. The corn is nine feet tall and hasn't begun to flower, and the peas are blooming and putting out runners, but no peapods yet.
